Hawaii and Fences

Our VBS, Outrigger Island starts on Sunday. I have been decorating my room most of the day today. Not done yet. It should be lots of fun!! It's a Hawaiian theme. I'm teaching the missions story for the 4th-6th graders. I'll have to take pics of my room and post them.

John is still hard a work on the fence. He is soooo close to getting it finished. He is so proud of it! It will be so great when he finishes it. He has been working until it gets dark outside about every night this week.

I need to go give Liv Lou a bath. She has been play'n outside and is a messy bessy.

Another Way to Make Chicken

I made this tonight for supper. Super yummy! Super easy! Try it.

Chicken Crescent Rolls

3 chicken breasts, boiled and shredded
1 8-count package cresent rolls
1 can of cream of chicken soup
1/2 cup of milk
1 stick of butter or margarine
2 cups of cheese, shredded

Preheat oven to 350 degrees. Separate crescent rolls into 8 triangles. Spoon shredded chicken onto each triangle. Roll up press to seal edges. Place rolls in a 9 x 13 baking dish. Heat soup, milk, butter, and 1 cup of cheese over low heat. Stir until cheese is melted . Pour sauce over rolls. Sprinkle remaining cheese over top. Bake for 30 min. or until rolls are brown. Makes 8 servings.

This isn't the most figure friendly dish (butter, cheese...but OMG so good!!). You can make this lower fat.
Use:
Reduced fat cresent rolls
Fat-free chicken soup
Smart Balance margarine

Don't skimp on cheese. Use the regular cheese. The fat-free doesn't melt well. Make this one tonight. Pretty tasty!!

Serious Progress


Wow! We actually have a back yard all to ourself!! YEA!

Thank you Lord for awesome friends!! If our friends haven't have come to help John last night he would have been working a lot of evenings and weekends to get this done. You all are a blessing! We love you.

We still have to buy a few more pickets. Just a few short. It looks so great! We got up this morning and looked at it for a while. We are beyond thrilled!! Now, how long will it take you all to build a swing set? Ha Ha!! Just kidding...

Family Fun



Josh and Elizabeth (John's Sis) came to visit this weekend. We had a great time! Saturday we took the kids swimming for a while at the pool in Mtn. Home. Then after we came home the kids took a long nap. Then we took them out to Cotter Spring to play and then for ice cream. Sunday, they came to church with us and then out to lunch. Josh and Elizabeth had a 5 hour drive ahead of them so they left when we got home from lunch. We always love it when they come! Glad they came to our neck of the woods! We love you guys!!

A Hot Time


I went to my Mommy group this morning. We met at Hickory Park so the kids could play. It was hot! Very humid! But it was a good time to visit and let the kids play and stuff.

I'm getting ready to make banana bread and cookies. John's sister and her family are coming this evening. We always have a good visit when they come. We may take the kids to the pool or river so they can swim and get wet. We look forward to them coming.

The Moeckel Rating Is In

Okay, I didn't have to nudge too hard on the whole date, Batman movie thing. John was totally up for that. We saw it tonight. The movie is so awesome!! The thing I loved about it is that there was no bad language (okay maybe 2 words..)and it wasn't bloody. There was violence though...PG-13. It's great that you can watch a movie without every other word being a cuss word. Anyhoo...Awesome movie!! In my opinion Christian Bale is the best Batman ever! I smell a sequel. A must see.

Okay, A Bit Jealous...

I know jealousy isn't good but.. I'm jealous (just a tad) that a lot of my friends and family have saw the new Batman movie and we haven't! Okay John...I feel a date night a come'n. It looks really good!! Maybe if some of our friends would drop him an email and tell that his sweet, hard working at home wife needs a date that would be great!! A little nudging never hurt anyone. If anyone would like to come with. That would be fun too!

A Peachy Day

Today I cut up all the peaches we bought over the weekend. Of course, Mom took the other half of the box home with her. I put them into the freezer and I have enough for a cobbler. You would think after cutting up half a sink of peaches I would have enough for 5 cobblers. Oh well...

Livy Lou just played with her toys and books. Oh, the simple life of a toddler.

Oh my gracious, she is getting to be a big girl!!!!! Time for a haircut too! Oh Amy! Livy is in need of hair therapy!

Dad, John, and my brother Brian worked on the fence in the back yard. Mom and I cooked a lot this weekend. Mom made homemade ice cream and a peach crisp. We went to Friend's Orchard and split a big box of peaches. The cobbler was soooo yummy!! Had a good time with the 'fam'!

Some Much Needed Scrapbooking!

I really heart scrapbooking!! I'm still working on Livy's baby book!! Oh my word, it has taken me over a year to do it! I'm getting with it now. I have had fun these past two days scrapbooking. These are the fruits of my labor.
Scrapbooking is a great way to preserve memories in a really personal way. It is tons of fun!

Project privacy fence is still under way. We are getting closer. All those holes are dug and the posts have been set. We have some honk'n rocks in our back yard! Thanks to our friend Joe who made it easier with the tractor. John has worked so hard!! The next phase I guess would be putting the cross beams (is that what you call it) up.

Childhood Memory


If you have not fixed squash this way, then you should!! My Mom used to cut squash or zucchini into slices then cover it in flour, then egg, and back in the flour. Then she would fry it until golden brown. It is soooooo good!! I can close my eyes and see my Mom at the stove frying it. During the summer we ate squash like this a lot!! We grew squash in our garden so we had it all the time. You can use vegetable oil or olive oil to fry it in. (olive oil is better for you)

Another First for Livy

Our friend Joe brought his tractor over with the auger on the back and they dug holes for the privacy fence. When they were done Livy rode the tractor with uncle Joe. Don't ya love the beauty queen wave!! She loved the tractor!

Joe and John got all the holes dug. What a blessing! It would have taken John a whole Saturday to dig the rest of the holes. I think he had 10 more to dig. Can't wait for the fence to be finished!!The back yard will be great!!

Monday at Home

Today we hung out at home and I was able to get back into my routine. After our long weekend last week it kinda through me off. Did laundry and stuff. Oh joy! That is probably the chore I HATE to do most!! But, I just try to get it over with.

On a better note. Livy is doing well with potty training! She told me she had to potty (#2)yesterday so I sat her on the stool and she went! YEA! We have been doing the pull-up thing today. It has been going well with the exception of a nap time poopy accident. Accidents happen. She has been doing really well and for 18 months old I can't complain.

Tried I new cookie recipe today. Chocolate oatmeal chewies. Lots of oats in this one. Really pretty good. They are a flat chewy cookie. I like to find recipes that have oats in them. With more nutritional value I guess I don't feel as bad eating them. Hey, there oats in them!

Told ya they were a flat cookie, not much flour in them. But they are really good!

Our Little Lady

I took these pics today while we were outside playing. I was able to play with them and change the tent. I really like the way they turned out!

Recipe~Breakfast Pizza

John made his super yummy breakfast pizza this morning. I recommend you give it a try! He was very proud of it. He normally does the breakfast pizza in our house. He did a great job!

This is what you will need:

*2-4 cans of biscuits-small cans (use 4 if you like leftovers)

*Eggs (about 6-8)

*Milk-1/4 cup or a little less (for scrambling eggs)

*Breakfast sausage (you could use bacon too!)

*Your favorite cheese

*Onion and green peppers (optional of course)

*Non-stick cooking spray (SOOOOO important)

Pre-heat oven to the temp on the biscuit can.

Spray a cookie sheet with non-stick cooking spray (important!)and line up the bisuits. Pinch together to make a crust. Heat skillet. Chop a little onion and green pepper (to your liking), put into heated skillet. Crumble sausage in skillet and fry with the onions and peppers. Drain off grease. Crack eggs in a bowl, add milk and whisk together. Pour eggs in the skillet with the cooked sausage, peppers, and onions. Scramble eggs until they just come together. About 1/2 way done. Egg will still be runny. (don't cook them all the way or they will be dry on your pizza. remember they will cook the rest of the way in the oven) After the eggs have just come together, put them on top of your biscuit crust and spread to the edges. Then top with cheese. Bake for about 15-20 min and enjoy!

We used all 4 cans of biscuits and ate about 1/2 of the pizza. We had fresh fruit with it too. It is good warmed up on the pizza stone in the oven for breakfast again the next morning.

This is just a method for making breakfast pizza. You could do this so many different ways!!

A New Look!

I painted the living room this week. I painted it brown, oh wait, "journal cover" to be exact. John was a big help too. He helped me during the evenings. We finished up last night. I painted around trim during the day, but most was done at night while Livy was asleep. I've been painting since Monday and I'm so glad it is done! I love love love the color!! It's definitely a good change and much better than the blah of white! I'm considering tackling the guest bathroom and the office/guest room.

For some reason I put a sideways pic of Livy in the slide show. Just ignore it. Don't feel like changing it.

Great 4th of July Weekend!

We had a great, fun, and LONG weekend. We enjoyed the family getting toether. My brothers and sister came. Although Angela had to leave later Friday morning (that was kind of a bummer, but we were glad to see her anyway. I know she wanted to stay, but she had to work!). My Dad's brother's family from Jonesboro came and stayed at Grandma Spencer's and my cousin Greg that works for the Forest Service in Winona came every evening to hang out. We had some really great weather. This is the most pleasant 4th of July I can remember, not super hot! Friday it rained but that was the only day. Nothin' to that day but set inside and watch movies (we also ate alot of homemade ice cream!! YUM!) Saturday we took the kids to the river to splash and play. We set off fireworks (of course, Livy loved the sparklers...however, it made momma nervous!!), had a bonfire one night and made smores and laughed until late. John and I even did some fishing in the ponds. Didn't catch anything though. It was a great weekend

A Week of Busyness (but it's good!)

Today has been a day of running and getting things ready for a long wonderful weekend. This morning after breakfast, taking Liv to the potty (which by the way when I put her on the potty after breakfast she was DRY and she went #1 and #2!!! Yahoo for you Livy!) We went Wal-Mart today to buy some groceries. I'm trying to get a head and buy the things I will need for our 4th of July weekend at my parents. My Dad's Brother's fam from Jonesboro is coming and my brothers and sister will be there too. So we will all be together. I guess the 4th is has been the holiday when the Spencers get together. We normally go to Alley Springs and cook breakfast on the river, but I don't know if that's going to happen this year. But, lots swimming in the river will occur! A good time will be had by all.

Tomorrow night I am in charge of Nic @ Nite at church. Kathye is away on vacation so I will need to get all that together tomorrow and go over my Bible story and stuff. Really it's nothing new I did it for 2 1/2 years.

Thursday Livy goes to Mom's Day Out so I'll be able to get the house picked up (I HATE coming home from a trip to a messy house!!) and our stuff pack and in the car. John get's off work early on holiday weekends so we get to head out early. YEA!

Well I hear Livy up from nap. We need to eat lunch and I have a cut and color appointment later. God bless you Amy for dealing with my hair!!
